Thanksgiving time is here. A time when Traditions are enjoyed and past from one generation to the next, or sometimes Traditions are thrown out the window to enjoy a new way of doing things. So far we seem to be doing a mix. With Thanksgiving here for me it means two things... cooking and...
LEFSA!!!!!! OH YEAH!!! LEFSA!!!!!!
(all you Norwegian's out their rejoice with me!)
Lefsa. The ultimate staple for Thanksgiving and Christmas holidays. That delicious potato flat bread spread with yummy butter, sugar and cinnamon. My husband adds the whip cream on his. Just the thought of the taste sends me drooling in anticipation.
So Lefsa is traditional... what is not is making it on my own this year and on a plan rectangle skillet. Year after year I've been able to be around home for the holiday enabling my mother and I to get together for the rolling, cooking and of course eating of the treat, on her Lefsa Griddle. However since we have moved over 1,200 miles away I am faced with sucking it up and doing it my self or skipping it all together. HA! No way am not trying anyway.
So let us take this season of thanks to Thank GOD for the creation of Lefsa.

Oh sigh.
The only thing constant in Life is change.
I pray that all of you have a WONDERFUL Thanksgiving.
That as you push and shove your way through lines during the Christmas shopping season you can be an example of Christ in all you say. What you show during the hard times, rough times, busy times, sad times is coming from your heart. And I pray that what is in your heart is Christ and that HE can use you this season to show people why we celebrate Christmas.
Meanwhile remember to love all those around you, even when you don't feel loved. Be thankful for everything, no matter how little.
We are homeless living with a sister in law
We have no money. -$50 today.
We have no gifts for the kids they sleep on a sofa
We have no oven to cook with
No washer and dryer to clean with
We have no freezer to store food in for later
We have no money for food
We have in all since of this modern world... Nothing. We have nothing.
And yet..
We have absolutely EVERYTHING!!!!
We have FAMILY that love us and help out when they can
We have FRIENDS that send love and gifts, visit us and pray
We have CHURCHES that encourage us and bless us
We have CHRIST JESUS who died for us to be with God
and we have GOD who when WE have nothing has always given us EVERYTHING we NEED
So when you feel a pitty party coming on.. SNAP OUT OF IT! You are more rich then you ever dreamed!! You have an AMAZING GOD that will supply EVERY NEED, you have a GOD that LOVES YOU the way you ARE NOW, You have a GOD that will make sure NOTHING happens to you that HE can't see you through. YOU HAVE A GOD!
So Happy Thanksgiving. And if you really can't find ANYTHING to be thankful about; lay back down in your coffin cuz you must be dead. Be thankful for breathing.
God bless.. I love you.
